Diana Nicoglo, conferen\u021biar universitar \u0219i cercet\u0103tor \u0219tiin\u021bific superior \u00een cadrul Sec\u021biei \u201eCultura tradi\u021bional\u0103 a minorit\u0103\u021bilor etnice\u201d de la Institutul Patrimoniului Cultural, a desf\u0103\u0219urat o expedi\u021bie etnografic\u0103 \u00een satele Avdarma (raionul Comrat) \u0219i Gaidar (raionul Chad\u00eer-Lunga). Scopul principal al acestei expedi\u021bii a fost colectarea materialului de teren privind hrana de zi cu zi \u0219i de s\u0103rb\u0103toare, cu accent pe preparatele cu carne sau adaos de carne, pentru realizarea unui <em>Atlas etnografic<\/em> dedicat tradi\u021biilor alimentare ale g\u0103g\u0103uzilor.<\/p>\n\n\n\n<p>\u00cen cadrul cercet\u0103rii, s-au utilizat metode precum observa\u021bia direct\u0103, interviurile \u0219i conversa\u021biile. O aten\u021bie special\u0103 a fost acordat\u0103 document\u0103rii denumirilor locale ale preparatelor \u0219i ingredientelor, o sarcin\u0103 ce s-a dovedit fructuoas\u0103 mai ales prin dialogurile cu profesorii de limb\u0103 g\u0103g\u0103uz\u0103 \u0219i cu locuitorii mai \u00een v\u00e2rst\u0103 ai comunit\u0103\u021bilor. Expedi\u021bia a eviden\u021biat unele diferen\u021be locale semnificative. Spre exemplu, termenul utilizat pentru \u201ecarne\u201d \u00een Avdarma este \u201eyaan\u0131\u201d, \u00een timp ce \u00een Gaidar se folose\u0219te \u201elokma\u201d. De asemenea, preparatul cunoscut sub numele de \u201epiftie\u201d \u00een limbajul culinar general este numit \u201epa\u00e7a\u201d \u00een Gaidar, termen reg\u0103sit \u00een alte limbi turcice, pe c\u00e2nd \u00een Avdarma este denumit \u201el\u0103\u00e7itura\u201d, reflect\u00e2nd influen\u021ba cultural\u0103 moldo-rom\u00e2n\u0103 asupra acestui sat.<\/p>\n\n\n\n<p>Metodele de preparare a m\u00e2nc\u0103rurilor din carne sunt, \u00een linii mari, similare \u00een cele dou\u0103 sate, iar diferen\u021bele identificate \u021bin mai degrab\u0103 de preferin\u021bele individuale ale gospodinelor. Tradi\u021biile culinare de s\u0103rb\u0103toare reflect\u0103 o continuitate a specificului regional. La nun\u021bi, mesele festive erau compuse din c\u00e2teva feluri principale, precum carne jeleat\u0103, kaurma fierbinte, varz\u0103 cu carne \u0219i t\u0103i\u021bei de cas\u0103 cu carne. Totu\u0219i, exist\u0103 varia\u021bii \u00eentre cele dou\u0103 sate, astfel c\u0103 \u00een Avdarma t\u0103i\u021beii erau servi\u021bi la finalul mesei mari, \u00een timp ce \u00een Gaidar sarmalele marcau acest moment festiv.<\/p>\n\n\n\n<p>Un alt aspect remarcat a fost diversitatea denumirilor locale pentru condimente. \u00cen ambele sate, condimentul pe baz\u0103 de ardei ro\u0219u este numit \u201emanca boyas\u0131\u201d (literal \u201evopsea alimentar\u0103\u201d), \u00een timp ce \u00een Comrat este cunoscut sub denumirea \u201ebiber povidlas\u0131\u201d (gem de ardei). \u00cen alte localit\u0103\u021bi din sudul Republicii Moldova, precum Etulia sau Ce\u0219michioi, termenul folosit este \u201edumati\u201d, o denumire care circul\u0103 \u0219i \u00een satele moldovene\u0219ti din regiune, precum Giurgiule\u0219ti sau Alexandru Ioan Cuza.<\/p>\n\n\n\n<p>Aceast\u0103 expedi\u021bie a contribuit semnificativ la documentarea tradi\u021biilor culinare g\u0103g\u0103uze, identific\u00e2nd at\u00e2t elementele comune, c\u00e2t \u0219i varia\u021biile locale ale practicilor alimentare.
